Curried Chicken and Fruit Salad

Enjoy Chef Carlo’s quick and easy Curry Chicken and Fruit Salad!  Great for lunch, a mid-day poolside treat or a late-evening treat!  Makes 2 servings.


-1/2 cup plain low fat yogurt

-juice from 1 lime

-1/2 cup each: blueberries, strawberries, mandarin segments

-1/2 mango cut into 1″ cubes

-2 chicken breast strips (grilled)

-1 bag mixed greens

-1/2 bag baby spinach

-1 teaspoon curry powder

In a small bowl, stir together yogurt, lime juice and curry powder. Place fruit and chicken breast in a medium mixing bowl. Add curry yogurt dressing and stir to coat. In a large serving bowl, mix the spinach with the mixed greens. Top with the fruit and chicken mix.
